CHAMPAIGN – A cooperative event between the Illinois Department of Natural Resources, the University of Illinois, and the Louisiana Department of Wildlife was held to promote serving of Asian Carp as a dish in the United States. On Monday chefs from both states worked on the project to develop multiple courses incorporating what they have begun calling “Silverfin”. Illinois Lt. Gov. Evelyn Sanguinetti said the effort was to stop the spread of the invasive fish by encouraging growth in the fishery industry and create more jobs. Asian Carp are now found in most of the rivers and streams between the Appalachians and the Rockies and are the most dominant species in those waterways.
